The “White Moon” of Imereti (Soft)

In one of the green valleys of Imereti, there lived a young woman named Mzia, known across the region for her gentleness and her skill in cheesemaking. Villagers said she had “milk in her hands”—everything she touched turned soft, tender, and pure.

One summer, a terrible storm destroyed much of the village harvest. Food became scarce, and people feared winter would bring hunger. Mzia, determined to help, woke before sunrise each morning to collect milk from neighbors who could spare even a small cup. She worked quietly, heating the curds over a clay stove, singing old Imeretian songs as she stirred.

One night, exhausted, she left a clay pot of curds by her window under the bright full moon. When she awoke, she found the cheese had set into a perfectly round, snow-white wheel—smooth as silk, gentle in aroma, and rich in flavor.

The elders tasted it and said:
“This is the Moon’s blessing. A cheese to carry us through hard times.”

They named it “Mze da Mtve”—the Sun and Moon cheese—but over time it simply became known as Imeruli cheese, the cheese that brought comfort and calm.

Every family in the valley soon began shaping their own round white wheels—symbolizing hope, renewal, and the promise that even small offerings can nourish an entire village.

To this day, Imeruli cheese is often made in simple, round forms, honoring the story of Mzia's “White Moon cheese,” believed to protect the home and bring warm, steady abundance.
